Baked Fruit
organic apples & pears
natural or brown sugar
cinnamon
butter (optional)

Slice fruit into quarters, cut out seeds, and lay in baking pan. Put a tiny piece of butter on each. Mix desired amount of sugar with cinnamon, and sprinkle over fruit. Bake in preheated oven at 375 for 15 minutes.

Berry Frozen Yogurt Pie
2 small containers low-fat or nonfat yogurt
     (organic, no high fructose corn syrup)
1 bag frozen berry medley
whipped cream
homemade graham cracker crust

Mix yogurt, frozen berries, and whipped cream in a large bowl. Fill graham cracker crust, then freeze until solid. Slice, and defrost small individual pieces at room temperature before eating.


Burritos
organic black or pinto beans
white, spanish, or brown rice (lime & cilantro optional)
organic/free range chicken (breast, thighs, or whole)
     [vegetarian- cook 'meat' crumbles with packet of taco seasoning]
shredded natural cheese (pepper jack, cheddar, or mexican blend)
sour cream, avocado, & salsa (optional)
flour tortillas (no preservatives)

Chicken- Season with either salt & pepper, Pappy's seasoning, lemon pepper, or my favorite- see recipe for 'Chicken: Easy Marinade'. Pan sear, bake, or grill. Cut or shred into bite size pieces.

Rice & beans- Season cooked rice with lime and black pepper, or see recipe for Gloria's famous 'Gallo Pinto'. After putting burritos together, I like to brown the tortilla in a non-stick pan.


Chicken: Easy Marinade
1-3 tbsp. organic olive oil
juice of 1/2 a lemon
4-8 garlic cloves, quartered
3-6 sprigs of rosemary
salt & pepper to taste


Marinate in a container overnight, or at least a few hours. Pan sear, bake, or grill.


Chicken: French Marinade
1-3 tbsp. organic olive oil
1 tbsp. chopped rosemary
1 tbsp. chopped thyme
1 tbsp. chopped garlic
juice of 1/2 a lemon
1/4 tsp. crushed red pepper
salt & pepper to taste


Marinate in a container overnight, or at least a few hours. Pan sear, bake, or grill.


Dressing: Lemon Vinaigrette
organic olive oil
crushed/chopped organic garlic clove (fresh, or pan roasted)
fresh juice of 1/4 lemon
salt & pepper to taste

Whisk ingredients until well blended. Toss with mixed greens just before serving. I love avocado and seared tuna on this salad.

Dressing: Warm Bacon Vinaigrette
2 slices pepper bacon
juice from dill pickle jar

Cook bacon, then cut or crumble into pieces. Reserve a tiny drizzle of the bacon fat, and heat in pan with a tablespoon or two of dill pickle juice. Reduce slightly, then add a couple more tablespoons pickle juice, or until desired amount. Pour over favorite lettuces while still warm. Garnish with crunchy bits.
Gallo Pinto (Gloria's Famous)
1-2 Tbsp. organic olive oil
1/2 small yellow onion, chopped
1/2 garlic clove
crushed red pepper
1 can organic blacks beans
approx. 1/2 cup white rice
2-4 Tbsp. tomato salsa

Garlic Croutons
sliced sourdough or italian bread
garlic clove (peeled)
organic olive oil
pinch of kosher salt (optional)

Toast bread until lightly golden. Rub with garlic while hot, both sides for extra flavor. Cut bread into cubes, toast again until golden brown. Drizzle with a little olive oil, sprinkle salt, and toss.


Mashed Potatoes: Creamy Garlic
4-5 pounds gold potatoes
6-10 garlic cloves
12 tbsp. unsalted butter (softened)
1 1/2 cups half & half (warmed)
2 tsp. salt

Peel, cut, then bring potatoes to a boil in water. Gently boil for 20-25 minutes. During last few minutes, add garlic cloves in boiling water. Drain and mash. Mix in butter, warmed milk, and salt. For added garlic flavor, pan roast half the garlic in a little butter, then mash with drained potatoes.

Mashed Potatoes: Light & Healthy


Smoothie: Berry
small handful each (mostly organic):
     frozen strawberries
     frozen pineapple
     frozen blueberries
     frozen raspberries
small container low-fat or nonfat yogurt 
     (organic, no high fructose corn syrup)
1/2 - 1 cup orange juice (not from concentrate)
spoonful of organic honey or natural sugar

Blend in blender until desired consistency.


Smoothie: Green Berry
1/3 c. orange juice (not from concentrate)
large handful organic baby spinach
1/2 organic plain greek yogurt
1 tsp. organic honey
1/2 frozen banana
4-6 frozen strawberries
1/2 hand full frozen pineapple
1/2 hand full frozen blueberries

Blend orange juice, spinach, and yogurt in blender until smooth. Add other ingredients, blend until desired consistency.

Smoothie: Green Monkey
1/4 c. organic soy milk
large handful organic baby spinach
1/2 organic plain greek yogurt
1 tsp. organic honey
1/2 frozen banana
1-2 tbsp. natural peanut butter

Blend milk, spinach, and yogurt in blender until smooth. Add other ingredients, blend until desired consistency.
